Baked Courgettes

4 small courgettes
1 tbsp olive oil
2 cloves garlic, finely chopped
50g grated parmesan cheese
salt and pepper to taste

Preheat oven to 200c.  Wash and halve courgettes lengthways.  Arrange courgettes, cut side up, in a single layer in an ovenproof dish. Brush with olive oil.  Sprinkle with garlic, cheese and salt and pepper. Bake for 15 mins until courgettes are tender and cheese is browned.  Easy peasy - delicious on its own and delicious with a Sunday roast.
